Asian Fruit Compote
A bright and refreshing summer dessert
Serves: 6
Ingredients
1 cup water
½ cup fresh mint leaves
¼ cup sugar or sugar substitute
½ of a 6-ounce can of frozen limeade
2 cups 1-inch slices of papaya
2 cups 1-inch slices of mango
½ cup 1-inch slices of kiwi
6 mint sprigs as garnish
Instructions
In a medium saucepan over high heat, add water, mint, and sugar and bring to boil. Reduce heat to medium, cover, and simmer for about 12 minutes. Remove from heat, strain mixture through fine-mesh strainer. Discard mint. Stir in limeade.
Place fruit into large serving bowl and pour limeade mixture over fruit, stirring to coat. Cover and chill 6-8 hours. When ready to serve, toss again and divide among 6 plates. Garnish with mint.
